Marking the arrival of a new spirit and style of hospitality on the French Riviera, Hôtel du Couvent, a Luxury Collection Hotel, Nice, France opens its doors in the heart of Nice’s Old Town, offering a garden sanctuary in the heart of the city. Within the convent’s outer walls, 2.5 acres of gardens lie hidden from the outside world. Working with Tom-Stuart Smith as the lead landscape designer and James Basson of Scape Design, the garden was restored and replanted to reconnect the building with the land that feeds it, over 300 species naturally scent the air - from olive and lemon trees to herbs and flowers - with the calm of this luxuriant garden punctuated by the sound of water trickling down the hill to the Roman baths, this is a place to listen, meditate and relax. In addition, the hotel’s culinary offering showcases an authentic taste of Nice and the surrounding hills; with a sharp focus on provenance, refined dishes will be led by flavour and use produce sourced from the hotel’s own farm in Touët-sur-Var. Supplying Hôtel du Couvent exclusively with seasonal vegetables, fruit and eggs from its 250 hens, the farm will host guest visits, dinners and food-focused workshops for gourmands.
